Today am gonna post for " kid's friendly recipes" and am sure every kid would love this..Cos, u know what ? It's loaded with cheeeeeese, oh yep, their fav.. Actually, I've already made some Indi sandwich for this marathon but I got so eager when heard abt this.. French baguette is required for crostini but having plenty of blead slices @ home, made me want to toast and the final product was absolutely delicious, glad I listened to my heart !!! Crostini is nothing but mini bread toasts dressed with an assortment of toppings that is great for kid's parties.. Sure , it's a treat for them.. Njoy kids ...
Ingredients :
For the topping :
Toasting the bread :
Preheat the oven @ 350 deg F. Place a cookie cutter in the center of the bread and cut into fine circles. Apply olive oil on both the sides and keep it on the tray lined with parchment paper. U can also cut the bread into two slices after removing the crust from all the sides. Again brush both the sides with olive oil and place on the tray. Bake for 10 minutes or until light golden brown ..( I like my bread to be a bit darken on the golden side as it will be more crispy..) .. Once out of the oven, cool it for few minutes.
In the meantime, prepare the topping ..
Preheat the oven @ 400 Deg F .Cut the mushrooms into small pieces. Now throw in the mushrooms on the tray lined again with wax paper , the tomatoes (whole) , eggplant slices . Spread it evenly. Now drizzle lit bit olive oil on top and season with pepper powder , salt lightly. Bake this for 3 to 5 minutes (oven may vary ) . Finally switch it to broiling mode and keep for 2 more minutes or less to get that charred effect. ( u may also pan roast all this items )
Remove it from the oven and cool it.
Tomato basil topping :
By now u'll be able to remove the skin of the tomatoes. Do peel that and cut into halves. Add the basil leaves ( u may use the fresh ones, if u hv) ,a drop of olive oil , salt and pepper powder ( I found that seasoning was not enuf after baking the veggie's ) and combine well.
Now comes the arranging part
* Take a bread slice and top it with roasted egg plant . Finally add the chick peas and some shredded cheese on top.
* Take a bread slice and layer with the cheese slice ( cut into hlaves) then add the egg plant sllices and add the tomato basil on top
* Place the tomato basil on top of the bread and serve
Just use ur imagination to fill up the layers and don forget to microwave it for 25 secs if u've added cheese as topping ...
